I’ve been meaning to get this instructable out for a while now. I love Swiss Zopf, also known as Swiss braided bread or Tresse. It’s a nice light, fluffy bread, easy to make, but not so easy to fold unless you have the knack. Well, here it is, described in the video. Enjoy!
The recipe is simple. To make the dough, use 300mL of warm milk, 80g of soft butter, a teaspoon of salt, a teaspoon of sugar (or honey), a packet of dry yeast (7g or so), and around 600g of flour (white flour, T55 is what I typically use). Prove for ca. 1h, then divide into 4 equal portions and form each into a long sausage, around 2cm thick. Then, follow the video for the folding! Prove for ca. 30mins and glaze with either milk or an egg yellow (much better effect with the egg yellow!). Then cook for 20mins at 210°C (fan assisted), or just keep checking the bottom of the bread for that “hollow” tapping sound.
